My Dinner Recipe: Chicken Breast with My Favorite Salad!

So... what are we eating for dinner today?! I hear that question DAILY!!!  But it is perfectly fine, because I always have the perfect answer, so when they ask what are we eating today, I always say: "FOOD" (HaHaHaaaa!! evil laugh).

Joke aside, my goal is to post my recipe and take you step by step.  I know today I picked a big recipe but I will post the whole meal, I will take you thru it and we will do it!!


1.  First Step: The first thing we are going to do is marinate the chicken.  I bought 12 slices of the really thin sliced chicken breast without skin.  I washed it with lime and let it set for like 5 minutes. After I let it set, I marinated with the following condiments:
  • 1/2 tsp of Kick'n Chicken Seasoning
  • 1 tbsp Rosemary Garlic Seasoning
  • 1 tsp of Goya Adobo with Bitter Orange (or any other adobo you might have)
  • 1/2 tbsp Accent Salt
  • 1 tsp Garlic Salt
  • 1 Lime (squeeze juice)
  • 1/2 tbsp Apple Cider Vinegar (or any other vinegar)
  • 1 Minced Garlic Clove
Cover it and leave it in the refrigerator between 4-24 hours (I left it for 24 hours).





While the Chicken is Marinating, let's work on the salad seasoning (which by the way it does need to be in the fridge for 12-24 hours too).

2.   Second Step: (Salad Seasoning):  to tell you the truth, this is my favorite dressing.  The recipe I will show you, you can make it with red tomatoes, green tomatoes and without tomatoes.  I made it with red tomatoes.
  • 1 Big Tomato (cut in little square pieces)
  • 1 Lime (squeeze juice)
  • 2 Minced Garlic Glove
  • 1/2 Cup of Olive Oil
  • 2 tbsp of Apple Cider Vinegar
  • 1/4 cup of Red Onions (cut in small pieces)
  • 1/4 cup of Chopped Cilantro
  • 1 tsp of Garlic Salt
  • 1/2 tsp of Cumin (optional)
  • 1/2 tsp of Salt



Mix everything together in a plastic container with a lid and shake it. Put it away in the fridge overnight.

3.  Third Step: Let's do some cooking!  Heat up the pot and add olive oil.  Stir fry the chicken around 10 minutes each side. After it's done, take the chicken out and, using the same olive oil, stir fry the peppers and onions for around 5-6 minutes (it depends how you want it cooked)










 



4.  Fourth Step: My Favorite Salad: Grate the cabbage and carrot together however you want, or simply just cut it into little pieces, it is up to you, and mix them together; add the dressing we made, cut the avocado and serve it with the chicken.




AND KABOON! The most delicious Dinner ever! I did made rice for the kids (I will post recipe later), but Papa Bear and I enjoyed our Pepper Chicken Breast with my favorite Salad.
